Chilled Pea Soup (serves 2)
This soup is perfect for a summer treat.
1 onion finely diced
15 g butter or margarine
300 g fresh or frozen peas
1 chicken or vegetable stock cube
2 sprigs of mint
500 ml cold water
pinch of salt
Fry the onions in the butter/ margarine until soft
Add the water, stock cube, peas, salt and mint to the pan.
Bring to the boil then simmer for 10 minutes.
Remove from the heat and allow to cool. Place in the fridge until needed.
Blend the soup until smooth.
Place in a serving bowl and add a swirl of single cream.
Serve with fresh Ciabatta
